When we moved into our home, back in the summer of 2007, we had no idea what was growing around our tree. We figured it was some sort of flower.
As the years went by the mysterious plants around the tree kept multiplying, so I decided to ask my momma what she thought it was. She told me it looked like garlic, so I dug one up and sure enough-she was right! So I started reading up about garlic. I found out how to plant it, grow it, harvest it, and this summer I harvested the garlic around my tree!
I left quite a few bulbs down in the ground, so they can grow again next spring, but I ended up with quite a large harvest!
I gave some of the freshly harvested garlic to my family & friends, I made 2 quarts of garlic confit with thyme & rosemary, I preserved 1 half pint of garlic, and my momma and I made 5 half pints of garlic powder.
I don’t know about y’all, but we love using garlic powder! Matter of fact, I use it in just about everything I make. So here’s how we made the garlic powder…
Break apart the garlic cloves, remove the skins, clean the cloves, remove any bruised or blemished parts, and thinly slice each clove. Try to make the slices the same thickness.
Next, lay the slices on a cookie sheet, one layer only, and place the cookie sheet in an oven on the lowest temperature for around 6-12 hours (depending on how thin your slices are). Make sure every piece is fully dehydrated.
Then, all you have to do is grind them up! I used my commercial grade blender, but you can use a food processor, I’m sure. Take caution when removing the lid to your blender or food processor once you’ve finished grinding the garlic, the fine garlic powder dust is very strong.
